Have you been able to lose weight without giving up tofu or tofu products? They seem to be my big problem losing weight.

1) I have substituted a lot of the tofu/tempeh meals that I used to make with meals composed of vegetables, beans, and a whole grain. Thick stews like a moroccan tagine or an indian daal over couscous or brown rice are a great and nutritious substitute for a seitan sandwich or something.
2) i have seriously limited nuts and nut butters. I still eat them, but about 5 g at a time. the veg community hypes nuts and nut butters like you can do no wrong when you're eating them. BS. This is the easiest way to inhale 700 calories in about three minutes without even really noticing it. yeah, ok, they're good for you, but there are plenty of other things that you can eat that are good for you and don't pack 180 calories in a 1 oz. serving.
3) I have a number of high-volume, low-calorie recipes that are very healthful and satisfying that I rely on instead of choosing more fattening, low-volume vegan foods. you can find such recipes at theppk.com, vegweb.com, or even reicipezaar.com, if you search with the appropriate terms. I rely on cookbooks like veganomicon, vegan with a vengeance, and vegan express for meal ideas that are low in calories and high in nutritional value. I usually halve the oil and double the vegetables in all of these recipes, and I weigh everything before i eat it to make sure i know what a portion size is and how much I am eating. again, stews and whole grains which have 270-350 cals in a 12 oz. serving instead of , say, pita with hummus or some falafel, which has 800 calories or so in an 8 oz. serving.
This diligence is necessary whether you are eating vegan or not. at first it can be tedious to find and learn recipes and to figure out what constitutes a serving and how many calories it has. but once you've got ten or fifteen such recipes under your belt, you're on your way. Eat whole, satisfying foods and a balanced diet within your calorie limit, and you will be fine.
I think that people gain weight when they eat vegan because most of the food they are eating is food that has not been stigmatized by society as "BAD". But for the purposes of dieting or weight maintenance, it's too many calories, not too many mac and cheeses, that one should ultimately seek to avoid. Better one nasty mac and cheese than a whole jar of delicious organic just-ground peanut butter. tragically.
